ひとつずつ丁寧に、時間をかけて、その土地、その空間、その人と向き合い、
禅利の思想に耳を傾けてくださる方とだけ、「縁」を結びます。

その“必然”を美しく醸す時間とともに、静かに在りたいと願っています。

We do not aim to “expand.”
We take our time, carefully engaging with each location, space, and person,

静岡の料理旅館での修行経験を持ち、日本の食文化に深く影響を受けてきた料理人。
妻・Katina氏とともに、カリフォルニア・ソノマにてレストラン・イン・ファーム一体型の「SingleThread」を創業。
ミシュラン三つ星をはじめ世界的な評価を受ける中で、土地と季節を映す料理を追求し続けている。

Kyle Connaughton

A chef who trained at a ryokan (traditional Japanese inn) in Shizuoka and has been deeply influenced by Japanese food culture.
Together with his wife Katina, he founded SingleThread, a restaurant and farm in Sonoma, California.
While receiving worldwide acclaim, including three Michelin stars, he continues to pursue cuisine that reflects the land and seasons.
